2 Delicious Appetizer Recipes for Spring

With Spring just around the corner, fresh food cravings are on top of our list. To satisfy your cravings we have come up with 2 delicious Spring-inspired appetizer recipes that will make you wish the season never ends. Enjoy these tasty snacks while you get your home professionally housecleaned.

Spring Rolls with Grilled Chicken, Strawberry & Poppy Seed Dressing

What you will need:

5 spring roll wrappers, one cucumber, one cup of strawberries, arugula, salt and black pepper, plain Greek yogurt or Kefir, 2 tablespoons of milk, honey, poppy seeds and wine vinegar.

How to make it:

First, prepare the poppy seed dressing. In a bowl add ¼ of plain Greek yogurt or Kefir, 2 tablespoons of milk, 1 tablespoon of honey, one tablespoon of wine vinegar, one tablespoon of poppy seeds. Whisk together and add salt and pepper to taste.

For the spring rolls, fill a big bowl with warm water to soak the wrappers. Dip them in one by one letting it soak for about half a minute or until they are completely softened. Remove the wrapper from the water and place it on a cutting board. Fill it with thin slices of strawberry, grilled chicken, cucumber, arugula and season with salt and pepper to your taste and roll them until it becomes a cylinder. Serve them on a plate and pour a little bit of poppy seed dressing on the side.

Tomato Bruschetta

What you will need:

Two finely chopped ripe tomatoes, ½ a white onion, 2 garlic cloves, ½ cup of basil, balsamic vinegar, black pepper, salt, olive oil, 1 loaf of French baguette.

How to make it:

In a bowl, combine the tomatoes, garlic, onion, basil, a tablespoon of olive oil, salt and pepper to taste. Combine and let it cool in the refrigerator.

For the balsamic glaze, heat ½ cup of balsamic vinegar in a pan over medium heat until it boils and continue to cook until it is reduced by half and set aside.
For the bruschetta, preheat the oven to 350 degrees. Cut the baguette in slices and place them in a baking tray. Brush the top side of each slice with olive oil and bake for about 15 minutes. Take them out of the oven and top each slice with a spoonful of the tomato mixture and pour a little of the balsamic glaze on top of each bruschetta and serve.
